I haven’t done fried chicken sandwiches in quite some time, so I figured Sunday football is a great excuse to come out of retirement.

Got thighs marinating in pickle brine with some jalapeños right now. Gonna do them 2 ways. Will post pics if they don’t suck.

How do you fry your chicken?
I can’t fry chicken to save my life
Dutch oven half-filled with peanut oil @ 320. Cooked it one at a time until it got to desired color, transferred it onto a wire rack, salted, and then put in the oven for another 10 mins @ 300 to cook through and crisp up further.

The biggest key to success is managing your oil temp. I use a candy thermometer and I strap it to the side of the Dutch oven with a guitar capo. :lol:
